Crazy Coconut Pie
- ½ cup flour
- ½ tsp. cream of tartar
- ¼ tsp. soda
- 4 eggs
- 2 cups milk
- ¼ cup butter or margarine, melted
- 1 can (4 oz.) frozen shredded coconut or (1½ cups fresh grated coconut)
- ¼ tsp. salt
- 1 tsp. vanilla
- 1 cup sugar
Preheat oven to 350 degrees.
Grease 9-inch pie plate that has a fluted rim or a 10-inch pie plate. Sift flour with cream of tartar and soda. In a large bowl beat eggs. Beat in flour mixture and remaining ingredients. Beat well. Pour into prepared pie plate and bake for 50 minutes or until knife inserted in center comes out clean.
