Cold Somen Salad
Tomie Yasak
- 1 pkg. (9 oz.) somen noodles, cooked
Broth:
- 1/4 cup sugar
- 1 cup chicken broth
- 1/4 cup soy sauce
- 1/4 cup rice vinegar
- 2 Tbsp. sesame oil
Garnish:
- 1/2 head lettuce, sliced thin
- 1 small cucumber, sliced thin
- 1/2 block red kamaboko, sliced
- 1 piece char siu, sliced or slivered
- 1/2 cup ham slices, cut in strips
- Sliced Spam or chicken breast (optional)
Combine broth ingredients. Bring to boil and simmer 5 minutes; chill.
Spread somen on platter. Over it put garnish and top with broth.
