Chocolate Crinkle Cookies

  • 2 C. flour
  • 2 tsp. baking powder
  • 1/2 tsp. salt
  • 1/2 C. oil
  • 4 squares of chocolate (or powdered cocoa equivalent)
  • 2 C. sugar
  • 2 tsp. vanilla
  • 4 large eggs
  • powdered sugar for coating

Combine the flour, baking powder, salt and set aside. Melt the chocolate squares (see note). Combine oil, chocolate and sugar. Blend in 1 egg at a time, mix well then add vanilla. Stir in flour, baking powder and salt. Chill dough several hours or overnight. Preheat the oven to 350°. Drop teaspoon of dough into powdered sugar and roll around. Place about 1 inch apart on cookie sheet. Bake 10-12 minutes. Note: If using powdered cocoa, do not heat up. If using Hershey’s powdered cocoa, use measurement on can to make equivalent to each square.
