Cheese Olive Cubes

  • 8 large eggs
  • ½ cup sifted all purpose flour
  • 1 tsp. baking powder
  • ¾ tsp. salt
  • 3 cups (12 ozs.) Monterey Jack cheese, shredded
  • 1 cup black olives, sliced
  • 1¼ cups (12-oz.) cottage cheese

In large bowl beat eggs with electric mixer until light, 4–5 minutes. Stir together flour, baking powder and salt; add to eggs and mix well. Fold in Monterey jack cheese, cottage cheese and olives. Turn into greased 9x9x2” baking dish and bake for 40 minutes in 350° oven. Remove from oven; let stand for 10 minutes. Cut in small cubes. Serve hot.

Instead of olives, 1 – 4 oz. can mild green chilies, drained, seeded and chopped may be used.
