Cucumbers Stuffed With Crabmeat

  • 2 medium cucumbers
  • 1 – 7 oz. can crabmeat, drained
  • 1/3 tsp. salt
  • Parsley
  • 1 tsp. vinegar
  • 3 hard-boiled eggs, cut zigzag through center

Peel cucumber in alternating lengthwise strips, skipping every other strip. Hollow out the inside of the cucumber with a vegetable corer and stuff with well mixed crabmeat, salt and vinegar. Cut into 1″ lengths. Garnish with halved eggs and parsley.
