Cucumbers Stuffed With Crabmeat
- 2 medium cucumbers
- 1 – 7 oz. can crabmeat, drained
- 1/3 tsp. salt
- Parsley
- 1 tsp. vinegar
- 3 hard-boiled eggs, cut zigzag through center
Peel cucumber in alternating lengthwise strips, skipping every other strip. Hollow out the inside of the cucumber with a vegetable corer and stuff with well mixed crabmeat, salt and vinegar. Cut into 1″ lengths. Garnish with halved eggs and parsley.
