Pineapple Pickles
- 1 fresh Pineapple (4 to 6 cups)
- 2 cups Sugar
- 2 cups Water
- 1 cup Vinegar
- 1 stick Cinnamon, 2 inches long
- 2 to 4 whole Cloves
- Dash of Salt
Peel pineapple and cut crosswise into 1 inch thick slices. Remove core and cut into sections about 1 inch wide. Combine sugar and water in a saucepan and heat until sugar dissolves. Add cut pineapple and bring to a boil. Cook for about 10 minutes. Remove pineapple and set aside. Add vinegar, cinnamon stick, cloves and salt to the sugar mixture. Boil until syrup is thickened. Return pineapples to syrup and continue to boil for 5 more minutes. Pour into hot sterilized jars and seal.
Yield: 1 to 1-1/2 pints.
