Pickled Cucumber
- 10 Japanese Cucumbers
- 1 cup Miso
- 1 cup Sugar
- 1/2 cup Beer
- 1/4 cup Salt
- 1/3 cup Vinegar
Cut cucumbers into 1/4 inch thick round slices. Place in a bowl and put weight on top to extract liquid. Drain. Combine miso, sugar, beer, salt, and vinegar. Pour over cucumbers. Let marinate for 4 hours and then refrigerate.
