Make Your Own Beef Jerky

Dorothy B. Y. Park Kataoka, CLASS OF 1945

Semi-freeze one flank steak (or any lean meat). Cut into thin strips with the grain. Marinate overnight in:

  • 1/2 cup Worcestershire sauce
  • 1/4 cup soy sauce
  • Garlic salt
  • Pepper
  • 1-1/2 tsp liquid smoke
  • MSG

Drain and put strips on rack; put racks in oven and dry at lowest temperature with the door ajar. This will take about 4-6 hours. Cool and store in airtight container.

NOTE: You’re in for a treat if you try this recipe–you’ll never want to eat store-bought jerky again. A protein-filled snack for camping or hiking or just for snacking. This recipe was given to me by my co-worker, Mrs. Kathryn Takehiro, whose husband is Minoru, Jr. This recipe is very ONO!
