Avocado-Deviled Eggs

CLASS OF 1947

  • 6 hard cooked eggs, halved lengthwise
  • 3 slices bacon, cooked crisp, drained and crumbled
  • 1 Tbsp prepared mustard
  • 1/8 tsp salt
  • 1/4 tsp paprika
  • Dash pepper
  • 3 Tbsp mayonnaise
  • 1 medium avocado, finely chopped

Set aside egg whites; sieve egg yolks. Combine yolks with remaining ingredients except avocado; mix well. Fold in avocado. Refill egg whites with yolk mixture. Sprinkle with additional paprika. Chill.

Yield: 12 egg halves

NOTE: Top with pimiento strip or parsley sprig for a fancy touch!
