Breadfruit Fritters (Tortillas de Pana)

  • 4 c. mashed boiled breadfruit
  • 1 tsp. salt
  • 4 T. butter
  • 2 eggs, beaten
  • 4 T. grated cheese

Add salt and butter to breadfruit and mix well. Add eggs and cheese. Mix well. Shape into round cakes (2½ x ¼-inch). Deep fry in vegetable oil. Drain on paper towels before serving. Yield: 16 fritters.
