Banana Muffins

  • ½ cup butter or margarine
  • 1¼ cup sugar
  • 2 eggs
  • 4 tbsp. sour cream
  • 1 tsp. baking soda
  • 1 cup mashed ripe bananas
  • 1½ cup flour
  • ¼ tsp. vanilla extract
  • 1 tsp. drained pineapple, crushed

Cream butter and sugar. Add eggs and mix well until light and fluffy. Add sour cream and soda and beat well. Stir in bananas and pineapple. Then add flour, salt, and vanilla and mix. Fill greased muffin tins 2/3 full. Bake at 350 degrees F for 20 to 25 minutes. Makes 16 muffins.
