Macadamia Nut Pie

  • 3 eggs
  • 2/3 cup sugar
  • 1 cup light corn syrup
  • 1½ cups chopped macadamia nuts
  • 2 tbsp. melted butter
  • 1 tsp. vanilla
  • 1 unbaked 9 inch pastry shell

Beat eggs with sugar and corn syrup. Stir in the nuts; add butter and vanilla, and blend well. Pour mixture into pastry shell. Bake in moderately slow oven (325 degrees) for 50 minutes or until crust is golden and center somewhat set; test by shaking gently. Let cool and chill. Makes 8—10 servings.
