Aunty Aileen’s Boiled Peanuts
- 1 pound Peanuts, raw
- 7 cups Water
- 2 tablespoons Hawaiian Salt
- 1-1/2 tablespoon Sugar
- 16 petals of Star Anise
Soak peanuts in water overnight. Place weight on it to keep peanuts submerged. Drain peanuts.
In a saucepan, boil water, salt, sugar and star anise. Add peanuts to boiling sauce. Cook on medium high for 45 minutes. Turn off heat and let soak for about one hour. Drain in colander.
