Cornflakes Butter Cookies #2
- 1-1/2 cups sifted flour
- 1/2 tsp. salt
- 1/2 cup butter
- 1/3 cup sugar
- 1 egg (unbeaten)
- 2 tbsp. orange juice
- 1 tsp. orange rind (grated)
- 1 cup cornflakes (crushed)
Sift together flour and salt. Cream sugar into butter and blend in the egg and half of the dry ingredients mixing well. Add orange juice, rind and rest of dry ingredients mixing well with each addition. Stir in cornflakes and drop by teaspoonful on an ungreased cookie sheet. Bake at 350 degrees for 9 to 12 minutes. While cookies are still hot, roll in powdered sugar. Makes about 3 dozen.
Variations: You may substitute lemon rind and juice for the orange. You may also add 1/2 cup nuts or substitute 1 cup of nuts for the cornflakes.
