Laurie’s Cornbread

  • 3/4 cup Cornmeal
  • 1-1/4 cups Milk
  • 1 cup Whole Wheat Flour
  • 1 tablespoon Baking Powder
  • 1/3 cup Sugar or Honey
  • 1 Egg, Slightly Beaten
  • 1/4 cup Oil

In a mixing bowl, combine cornmeal and milk. Set aside for 5 minutes. Sift together flour, baking powder and sugar in a bowl. Stir egg and oil into the cornmeal mixture. Add flour mixture and stir just until combined. Batter may be lumpy. Do not overmix. Pour into greased 8 inch cake pan.

Bake in a preheated 400° oven for 20 to 25 minutes or until done (toothpick inserted in center comes out clean).
