Bean Soup (Portuguese) #2
- 1 ham hock or 1/2 linguesa
- 1 1/2 cups dried red beans
- 1 onion (sliced)
- 2 medium-sized potatoes (diced)
- 1/2 small pumpkin (diced)
- 1 8-oz. can tomato sauce
- 1/2 bunch parsley (chopped)
Cook beans until soft, about ½ hour. Boil ham hock or linguesa before adding other ingredients. Add onion, potatoes and pumpkin to ham hock or linguesa and its liquid. Simmer until done. Add chopped parsley and tomato sauce. Salt to taste. Serve with rice or bread.
