Elegante Cheese Cake

Class of 1947

Crust:

Make crust by combining 1-1/2 cups graham cracker crumbs, 1/4 cup powdered sugar, 1 tsp allspice and 1/3 cup melted butter. Spread in bottom of 9-inch spring form pan, pressing some up the sides to form a rim about 1/2-inch to 3/4-inch high.

  • 2 pkg (8-oz) cream cheese, at room temperature
  • 2 eggs, slightly beaten
  • 2/3 cup sugar
  • 2 tsp pure vanilla extract

Stir cheese until soft and creamy. Add eggs, sugar and vanilla. Beat until thoroughly creamed and smooth. Pour into crust. Bake in 350 degree oven 25 minutes then top with a mixture of 1-1/2 cups commercial sour cream, 4 Tbsp sugar and 2 tsp pure vanilla extract. Return to oven; increase temperature to 450 degrees and bake 7 minutes. Cool; then chill.

NOTE: This is very rich, so serve small slices.
