Bibingca (Filipino Cake)
- 4 cups mochiko
- 1 tbsp. baking powder
- 4 cups coconut milk
- 1½ cups brown sugar
- 1 tbsp. vanilla
- ½ cup coconut milk
- banana leaves
Mix mochiko flour and baking powder in a bowl. Gradually add and stir in coconut milk. Add sugar and vanilla and mix well. Line pan with 2 or 3 layers of banana leaves, trimming edges at rim of pan. Brush coconut milk on the leaves to serve as grease to prevent dough from sticking. Pour cake mixture into this pan and bake in 300 degrees F. oven for about 20 minutes or until surface of the cake is slightly dry. Brush surface of the cake with coconut milk. This serves as frosting. Bake for about an hour.
