Easy Tofu Cakes

Etsuko Tanigawa

  • 2 blocks tofu, drained
  • 1/2 carrot, grated
  • 1/2 konnyaku, chopped
  • 5 shiitake mushrooms, soaked and chopped
  • 1/2 block kamaboko, chopped
  • 4 stalks green onions
  • 2 eggs, slightly beaten
  • salt to taste
  • oil for frying
  • Mix all ingredients together.
  • Form into patties and fry in 1-inch deep oil until brown.
  • Serve with dipping sauce.

Dipping Sauce:

  • 1 c. sweet chili sauce (Mae Ploy)
  • 1/2 Tbsp. shoyu
  • 1/2 Tbsp. vinegar
  • 1/2 Tbsp. sugar
