Shrimp with Pineapple
- 1 pound shrimp
- 1 can pineapple tidbits
- 2 cups oil
Batter:
- 1 cup flour
- 1 tablespoon sugar
- 1 egg
- 1/2 teaspoon salt
- 1/2 cup water
Sauce:
- 3 tablespoons brown sugar
- 1 tablespoon cornstarch
- 1 teaspoon salt
- 1/4 cup water
- 2 tablespoons vinegar
- 3/4 cup pineapple juice
Clean shrimp. Prepare batter by mixing together the dry ingredients. Beat egg slightly. Add water. Pour this with dry ingredients. Mix thoroughly. Dip shrimp in batter and fry in hot oil until golden brown. Make sauce by combining together the dry ingredients. Adding vinegar, water and pineapple juice. Bring to a boil, simmer for one minute. Place pineapple tidbits on platter with shrimp over pineapple. Pour the sauce over the shrimp.
