Ginger Cookies

  • 1/2 cup shortening
  • 1/2 cup sugar
  • 1/2 cup light molasses
  • 1/2 tbsp. vinegar
  • 1 beaten egg
  • 3 cups sifted flour
  • 1/2 tsp. soda
  • 1/2 tsp. cinnamon
  • 1/2 tsp. ginger
  • 1/4 tsp. salt

Bring shortening, sugar, molasses, vinegar to a boil. Cool. Add egg. Sift dry ingredients and add to egg mixture, mixing well. Chill.

Roll and cut dough. Bake on greased cooky sheet in moderate oven (375 degrees) 12 to 15 minutes. Makes 2-1/2 dozen. Recipe can be used for gingerbread men, too.
