White Bread

  • 2½ lbs. sifted all purpose flour
  • ½ cup sugar
  • ½ Tbsp. salt
  • ½ cup shortening
  • 2 pkgs. dried yeast or 2 Tbsp. bottled yeast
  • ½ cup evaporated milk, warmed
  • 2½ cups warm water

In a large bowl, put flour, sugar, salt, ½ of the shortening and dried yeast; cut shortening in with fingers. Add milk, kneading as you go along. Add warm water a little at a time kneading and drying dough before adding more water. When water is used up, add remaining shortening to knead the dough until it is smooth and shiny. Cover dough; let rise until 3 times its size. Shape into loaves, buns, etc. Let rise again and bake at 350° for 30-35 minutes for loaves; 25 minutes for buns.
