Taro Muffins

  • 2 cups flour
  • 1/2 tsp salt
  • 2 tsp baking powder
  • 2 Tbsp sugar
  • 1 cup cooked roughly mashed taro
  • 1/4 cup melted butter or margarine
  • 2 eggs, beaten
  • 1-1/4 cup milk

Combine dry ingredients. Combine separately the wet ingredients. Mix the wet and dry ingredients together and stir lightly. Pour into greased muffin tin. Brush top with milk. Bake in 325 degree oven until golden.
