Takuwan
- 3 to 4 Daikon
- 1/2 cup Vinegar
- 1 cup Brown Sugar
- 1 cup Water
- 1/6 cup Hawaiian Salt
- 1-1/2 small Red Chili Peppers
Cut daikon into thin slices and pack tightly into jars. Boil remaining ingredients. Pour over daikons in jar. Put peppers into each jar and cover tightly. Turn jars upside down overnight. Refrigerate and let cure a few days. Makes enough for one mayonnaise jar.
A dash of yellow food coloring may be added for color.
