Sweet Potato Casserole

  • 1 #2 can sweet potatoes
  • 3 T oleomargarine
  • 1/2 tsp salt
  • 1/4 c hot orange juice
  • 1 c drained, crushed pineapple

Mash potatoes, add oleomargarine, salt and orange juice. Beat until light and fluffy. Add drained pineapple. Place in greased casserole. Dot with oleo. Bake in oven, 375° F. for 15 minutes. Top with marshmallow and bake for 15 minutes more, until top is golden brown.
