Su Mixture (Use for Sushi and Namasu)
- 1 bottle Japanese vinegar
- 2 1/2 cups sugar
- 1/2 cup salt
- 2 T. ajinomoto
Boil the ingredients until the sugar dissolves. Pieces of ginger and dried shrimps may be added. Store in refrigerator. Use as needed–warm mixture before using for sushi.
