Spanish Rice #2

  • 1 cup uncooked rice
  • 1 clove garlic
  • 1/4 cup shortening
  • 1 tsp. salt
  • 1/4 tsp. pepper
  • 1 cup meat stock or boiling water
  • 1 small onion, chopped
  • 1/4 pound hamburger
  • 1/2 cup diced carrots
  • 1/2 cup chopped string beans
  • 4 cups tomato sauce

Wash rice and drain.

Rub a large cast iron frying pan with garlic. Heat frying pan. Add shortening and melt. Add rice. Fry 5 minutes; stirring constantly. Add salt and pepper. Stir for 15 minutes. Add more shortening, if necessary. Next add the hamburger, onion, carrots and string beans. Saute 5 minutes more. Add the tomato sauce and meat stock or boiling water. Lower heat. Cover and simmer until rice is tender–about 25 minutes.
