Seafood Snack

On the mainland, we always served this with Ritz crackers as an appetizer. Recently at an office potluck, people ate it over steamed rice and enjoyed it very much.
- 1/2 cup butter
- 6-ounce jar salad olives, minced
- 12-ounce can tomato sauce
- 5-ounce jar cocktail olives, diced
- 4-ounce can mushroom stems and pieces, diced
- 13 ounces tuna, drained and flaked
- 1 large dill pickle, minced
- 1/8 cup dry red wine
- 1/8 cup beer
- 1 teaspoon sugar
- 1 teaspoon oregano
- 1/2 teaspoon paprika
- 1/8 teaspoon cayenne pepper
- 4 ounces green chiles, diced
- 8 ounces quartered scallops
- 8 ounces diced shrimp
- Ritz crackers
Melt butter in slow cooker then add everything except shrimp and scallops. Simmer for 1 1/2 hours. Add shrimp and scallops at approximately the last 20 minutes. Serve with Ritz crackers. It is also excellent over steamed rice. Serves 10.
