Salted Peanut Crisps

  • 1 cup margarine
  • 2 eggs
  • 3 cups flour
  • 1½ cups light brown sugar, packed
  • 2 tsp. vanilla
  • ½ tsp. baking soda
  • 2 cups salted peanuts

Cream margarine and sugar well. Add eggs and beat well. Add vanilla. Mix. Add sifted flour and baking soda. Mix thoroughly. Add salted peanuts and mix well. Drop rounded teaspoonful 2″ apart. Flatten with greased bottom of glass dipped in sugar. Bake at 325 degrees F. Yield 6 dozen cookies.
