Red Velvet Cake
- 1 tsp. salt
- 1 cup shortening
- 1-1/2 cup sugar
- 2 eggs
- 2 tbsp. cocoa
- 2 tsp. red coloring
- 1 tsp. vanilla
- 1 cup buttermilk
- 2-1/2 cups cake flour
- 1-1/2 tsp. vinegar
- 1-1/2 tsp. baking soda
Grease two 9-inch pans and line with waxed paper and grease wax paper. Preheat oven to 350 degrees. Cream shortening and sugar. Add eggs. Make paste of food coloring and cocoa and add to above mixture. Mix salt and vanilla with buttermilk and add to creamed mixture alternately with flour. Mix soda and vinegar and fold into mixture. Bake for 35 to 45 minutes.
Frosting:
- 5 tbsp. flour
- 1 cup milk
- 1 tsp. vanilla
- 1 cup granulated sugar
- 1 cup butter
Cook flour and milk until a thick paste is formed. Cream together sugar, butter and vanilla and add to flour mixture. Beat until right it reaches a whipped cream consistency.
