Preserved Prunes
- 3 pkg. (2 lbs.) or 6 pkg. (12-oz. pitted) prunes
- 2 small pkg. apricots
- 2 large pkg. seedless Li hing mui (soaked and drained well)
- 1 T. Chinese 5 spice
- 2 cups lightly packed brown sugar
- 3 T. whiskey
- 2 cups lemon juice
- 3 T. Hawaiian salt
Mix all ingredients together except prunes, then add prunes and let stand 4 to 5 days. Mix ingredients about once or twice a day.
