Portuguese Vegetable Soup
- Soup Bone
- Salt to taste
- 1 cup White Beans
- 1 medium round Cabbage
- 1/2 bunch Watercress
- 1/2 bunch tender Kale (if available)
- 2 Carrots
- 1 yellow Turnip
- 1 large Potato
- 1/2 can Tomato Sauce
Put soup bone in pot with plenty of water. Bring to boil. Add a little salt.
In another pot, cook beans until tender. Chop cabbage, watercress and kale after washing well. Slice carrots, turnip and potato. Add vegetables to soup bone broth when it is sufficiently cooked and boil until vegetables are tender. Add cooked beans and tomato sauce. Stir well. Add salt to taste and boil 5 minutes. Add water, if needed.
