Pork Tofu Soup
- 3 Shiitake Mushrooms, cut fine, reserve water
- 4 cups Soup Stock
- 1/4 pound Pork, cut in strips
- 1/2 Block Tofu, cut fine
- 2 teaspoons Salt
- 2 teaspoons Shoyu
- 1/2 teaspoon Ginger Juice
- 1 Green Onion, minced
- 1 tablespoon Vinegar
- 1 Egg, beaten
- 1/4 teaspoon Pepper
- 1-1/2 tablespoons Cornstarch, dissolved in water
Soak mushrooms in water and then dice. Mix soaking water and stock in soup pot. Bring to a boil. Add pork, mushrooms, tofu, salt, shoyu, ginger, onion and vinegar to broth. Cook until almost done. Add egg slowly while stirring constantly. Season with pepper. Add cornstarch mixture to thicken soup.
