Pineapple-Spice Cookies
- 2 cups sifted flour
- 1 teaspoon Calument Baking Powder
- 1 teaspoon baking soda
- 1/2 teaspoon salt
- 1/2 cup Crisco
- 1/2 cup granulated sugar
- 1/2 cup brown sugar, packed
- 1 teaspoon cinnamon
- 1/2 teaspoon nutmeg
- 1/4 teaspoon ground cloves
- 1 egg, unbeaten
- 2/3 cup drained canned pineapple (crushed)
Set the oven at 375 degrees. Sift flour with baking powder, baking soda, and salt. Mix Crisco, sugars, cinnamon, nutmeg, ground cloves, egg, until creamy. Blend in pineapple; then flour mixture. Drop rounded tablespoonfuls of dough 2 inches apart onto ungreased cookie sheets. Bake until lightly browned, about 12 to 15 minutes. Makes 3 1/2 doz.
