Papaya Sauce Cake

  • 1/2 c. shortening
  • 1 1/2 c. sugar
  • 2 eggs
  • 2 c. diced ripe papaya
  • 3 c. enriched flour
  • 2 tsp. soda
  • 1 tsp. salt
  • 1 tsp. cinnamon
  • 1/4 tsp. ginger
  • 1/2 tsp. nutmeg
  • 2 tbsp. water
  • 1 tsp. lemon juice
  • 1 c. raisins

Cream shortening and sugar for 15 minutes; add eggs, one at a time, beating well after each addition. Add papaya and beat well. Sift dry ingredients together and add with water and lemon juice. Fold in raisins. Pour into an oiled and floured 9x12x2″ pan. Bake at 325 degrees for 45-50 minutes. Yield: 12 servings.
