Orange Kiss-Me Cake

  • 1 lg. orange
  • 1 c. milk
  • 2 eggs
  • 1 c. raisins
  • 1/3 c. walnuts
  • 2 c. all-purpose flour*
  • 1 c. sugar
  • 1 tsp. salt
  • 1 tsp. soda
  • 1/2 c. shortening
  • reserved orange juice

Cinnamon-Sugar Topping:

  • 1/3 c. sugar
  • 1 tsp. cinnamon
  • 1/2 c. chopped walnuts or pecans

Preheat oven to 350 degrees. Generously grease bottom only of 13×9″ cake pan. Squeeze orange; reserve juice. Place orange peel, milk and eggs in blender. Using grind (high)

speed, process until orange peel is chopped very fine. Add raisins and walnuts; process just until coarsely chopped. In large mixer bowl, combine remaining ingredients except topping and reserved orange juice. Add orange-raisin mixture. Blend at low speed until moistened; beat 3 minutes at medium speed, scraping bowl occasionally. Pour batter into prepared pan, spreading to edges. Bake at 350 degrees for 35-40 minutes until top springs back when touched lightly in center. Drizzle warm cake with reserved orange juice. Sprinkle with Cinnamon-Sugar Topping. Cinnamon-Sugar Topping: In small mixing bowl combine sugar with cinnamon and walnuts.

*For use with self-rising flour, decrease soda to 1/4 tsp. and omit salt.
