Orange Glazed Pumpkin Muffins

CLASS OF 1978

  • 1-2/3 cups flour
  • 1/2 cup sugar
  • 1 Tbsp baking powder
  • 1/2 tsp salt
  • 1/2 tsp cinnamon
  • 1/2 tsp nutmeg
  • 1 egg, beaten
  • 1/4 cup salad oil
  • 1/2 cup canned pumpkin
  • 2/3 cup evaporated milk
  • 1/4 cup orange marmalade

Sift flour, sugar, baking powder, salt, cinnamon and nutmeg into medium bowl. Mix thoroughly. Mix egg, oil and pumpkin together in bowl. Add evaporated milk. Mix well. Make well in flour mixture. Pour pumpkin mixture into well. Stir just until dry ingredients are moistened. Spoon into 12 buttered muffin cups. Place 1 level tsp marmalade on top of each muffin. Bake in hot oven (400 degrees) 20-25 minutes. Remove from pan immediately. Place on wire racks to cool.

Yield: 12 muffins
