Orange Bread

Mrs. Fusae Nakakura – Haina

  • 3 c flour
  • 2 tsp baking powder
  • pinch of salt
  • 1 c milk
  • 1 egg
  • 3 orange rinds
  • 1 c sugar
  • hot water

Parboil the rinds of 3 oranges. Remove the white skin and cut in small pieces. Make a syrup of 8-1/3 cup of water and 1 c sugar, and cook the orange pieces.

Drain, then add 1 c sugar and boil until rind is candied. Cool and add rinds and syrup to the batter which has been made as follows:

Beat eggs slightly, add milk and stir. Sift together the dry ingredients, add to the egg and milk mixture, stir slightly. Add the cooled rind and syrup to the batter and bake in moderate oven, 300° F. for one hour.
