Mustard Green-Artichoke Squares

A former co-worker, Kathleen Anderson, brought this dish to a potluck. It was so good I asked her for the recipe. She said she got it from a friend on the mainland. Because it’s so easy to make, she likes serving it. And she’s right. It’s ono as well.

  • 4 eggs
  • 10-ounce package frozen mustard greens or spinach, thawed
  • 3/4 cup Italian seasoned bread crumbs
  • 3/4 cup Parmesan
  • 1/2 cup olive oil
  • 2 teaspoons onion powder
  • 1 teaspoon garlic powder
  • 1 teaspoon salt
  • 1 teaspoon basil
  • 1/2 teaspoon Italian seasoning
  • 1 tablespoon dried parsley
  • 2 8½-ounce cans quartered artichoke hearts

Beat eggs lightly with fork in large bowl. Drain greens. Add greens and remaining ingredients except artichoke hearts to eggs. Fold in artichoke hearts. Oil bottom of 9×9-inch heat-proof glass dish. Pour in mixture and bake in 350° F. oven for 45 minutes. Cut into squares. Serve hot or cold.
