Mushroom Ham Soup
- 1 ham bone
- 2 quarts water
- 2 stalks celery
- 1 large onion
- 1 bay leaf
- 1 can condensed cream of mushroom soup
- 1 cup uncooked rice
- 1 tsp salt
- 1/4 tsp pepper
- 1/2 lb mushrooms, sliced
- 2 Tbsp butter
- 1 Tbsp minced parsley
- 2 tsp prepared mustard
Place ham bone in a large saucepan and cover with water, celery, onion and bay leaf. Cover pan and simmer 2 hours. Strain and skim broth. Stir in mushroom soup, rice, salt and pepper. Bring to a boil and stir. Cover and simmer for 20 minutes. Saute mushrooms in butter. Add to broth with minced parsley and mustard, blending well.
Yield: 6 servings
