Mochi Cake
- 16 oz. (3 1/2 cups) mochiko
- 2 1/2 cups sugar
- 2 tsp. baking powder
- 3 cups milk
- 1/2 cup (1 block) margarine or butter, melted
- 5 eggs, beaten
- 1 tsp. vanilla
- 1 tsp. lemon extract
- 1 cup shredded coconut
Combine all ingredients and mix well. Bake at 350° in a greased 9×13 pan, uncovered for 1 hour.
