Mocha Angel Cake

  • 1 angel food cake
  • 1 cup cold milk
  • 1 pkg. instant chocolate pudding
  • 1 cup heavy cream
  • 2 tsp. instant coffee

Cut angel food cake into 3 layers, using a long serrated knife. Pour heavy cream and milk into deep mixing bowl. Add instant coffee and pudding mix. Beat until well mixed, about 1 minute. Spread between layers and on top of cake. If desired, garnish top with chocolate curls made by using a vegetable peeler and a square of unsweetened chocolate. You can serve this cake immediately or chill it until serving time, or even freeze it (2-3 hours) and serve it as an ice cream cake.
