Mango Seed

  • 1 gal. dried mango seeds
  • 2 boxes brown sugar
  • ¾ tsp. five spice
  • Red coloring
  • Salted lime, minced (optional)
  • Water

In a large pot, add enough water to cover the mango seeds and boil for ½ hour. Drain, add sugar and cook over low flame, stirring constantly (½ hour). Add coloring, spice, and lime and continue cooking for another ½ hour, stirring constantly.
