Mango Bread

  • 2 cups flour
  • 2 tsp. cinnamon
  • 2 tsp. baking soda
  • 1 1/2 cups sugar
  • 1/2 tsp. salt
  • 3 eggs, lightly beaten
  • 1 tsp. vanilla
  • 1 cup salad oil
  • 2 cups mango, diced
  • 1/2 cup walnuts, chopped
  • 1/2 cup coconut
  • 1/2 cup raisins

Sift together the flour, cinnamon, baking soda, sugar, and salt. Add the flour mixture to the rest of the ingredients, which have been well mixed. Lightly butter 4 loaf pans, 2 1/2″ x 5″ (or 2 larger loaf pans). Pour in the batter to three-fourths full and bake for 55 minutes (or 1 hour 5 minutes for larger pans) at 350º. Cool and serve or wrap in foil and freeze or air mail.
