Malassadas (Filhoses)

  • 2 sticks cinnamon
  • ½ cup milk
  • 1 pkg. of yeast
  • 2 T lukewarm water
  • 1¼ cups sugar
  • ½ cup honey (for glazing)
  • ½ tsp. salt
  • ¼ cup butter
  • 2-3/4 cup flour
  • 3 eggs
  • 4 cups oil for frying

Heat cinnamon in milk to boiling point. Remove from heat and cool, remove cinnamon. Mix yeast with warm water. Add to salt, sugar and melted butter then to the warm milk. Stir in part of the flour, beating well to prevent lumps from forming. Add beaten eggs and remaining flour to form soft dough. Cover and place in warm place for 2 – 3 hours until doubled. Drop by tablespoon into oil (350°). Fry until brown. Remove and drain, then roll in honey and sugar (or just sugar). Serve. Makes 24 doughnuts.
