Macadamia Nut Angels
- 2 cups flour
- 1 1/3 cups sugar
- ¾ cup butter
- 3 eggs, separated
- ¾ cup cake flour
- 1½ tsp. baking powder
- ¼ tsp. salt
- ¼ cup salad oil
- 1/3 cup milk
- 1 tsp. vanilla
- ½ cup chopped macadamia nuts
Heat oven to 350 degrees. Combine flour and ½ cup of the sugar. Cut in butter until crumbly. Press in a 13x9x2 inch pan. Bake for 15 minutes.
Beat egg whites until frothy, gradually add ½ cup of the sugar and continue beating until stiff. Sift cake flour, remaining sugar, baking powder and salt into a bowl. Make a well, add oil, milk, egg yolks, and vanilla, and mix well. Fold mixture into the beaten egg whites. Fold in nuts. Pour batter over the baked crust. Bake for 35 minutes. Cool. Sprinkle with powdered sugar. Cut into bars. Makes 48 bars.
