Lima Beans

  • 1½ cups lima beans (dried)
  • 4½ cups water
  • ¾ cup sugar
  • ½ teaspoon salt

Soak beans in water overnight. Drain, add water and bring to a boil. Turn heat low and cook until beans are soft, (1 to 2 hours). Add sugar and salt, cook 10 minutes, shaking the saucepan occasionally. Cover and let stand 1 hour. If there is much liquid left, pour into another saucepan, boil down and pour back. Bring to a boil once more and remove from heat.
