Lemon Sponge Pudding

- 3 eggs, separated
- 1/4 tsp. salt
- 1/4 cup flour
- 1 cup sugar
- 1 cup milk
- Juice and rind of 1 large lemon
Beat egg whites and salt in small bowl. In large bowl blend egg yolks. Slowly add flour and sugar, then milk, grated rind, juice of lemon. Fold in egg-white mixture. Put in 6 good-sized (or 8 small) custard cups and bake in pan of hot water at 350° about 40 minutes. Serve either warm or cold.
