Left-Over Spanish Rice
- 2-3 slices bacon or ½ Portuguese sausage, sliced
- ½ med. onion, diced
- 1 stalk celery, diced
- 1 sm. bell pepper, diced
- 1 clove garlic, grated
Saute together with bacon.
- 2 cups cook rice (leftover)
Refrigerated rice must be loosened with small amounts of water.
- ½ cup catsup (more or less to taste)
- salt and pepper to taste
Mix with rice and add to the above mixture and cook till rice is nice and fluffy.
