Kumquat

  • 2 lbs. Kumquat
  • 1 tbsp. baking soda
  • 1 tsp. grated ginger
  • 2 cups water
  • 2 cups sugar

Wash Kumquats, sprinkle soda. Cover and let stand 10 minutes. Rinse twice. Place in kettle, cover with water, bring to boil. Cook until tender.
Make syrup of sugar and water in another kettle. Boil to soft ball stage. Add ginger. Drain kumquats and add to syrup. Cook until glossy and put into jars. Keep in refrigerator.
